Anna's Mum's Tooting Tomato Sauce!
| |
Healthy eating is, of course, as important as fitness – here’s Anna Mackay from Tooting-based We Are Fit Attitude with the first of her healthy Monday Meals. |
So many people are busy with work and life in general, so I like to come up with recipe ideas that are quick and easy to make, and are bursting with nutrients. My mum’s Tooting Tomato Sauce is no exception – easy to make, delicious, versatile, and bursting with vitamins. I make it in massive batches and freeze it so that it can be used to whip up a quick meal when needed.
Come summer, my mum’s house is full of tomatoes from my stepdad’s allotment. She’s been making it since I was a kid (I’ve added peppers along the way) and it’s an absolute winner!
It can be the base of loads of recipes, a few of which I’ll share in the coming weeks. I’m always happy to hear how others adapt it too, so feel free to experiment (and let me know what you come up with). Enjoy…
Ingredients
- Approx 800g tomatoes (any kind), destalked
- 4-5 cloves of garlic, peeled
- 3 x peppers (preferably red, yellow or orange) – deseeded, chopped into chunks
- 1-2 tbsp olive oil
- 30g fresh basil
- Salt and pepper
- 1 tbsp worcester sauce (optional)
- 1 tbsp balsamic vinegar (optional)
To make
- Pre-heat oven to 200 degrees.
- Place tomatoes, garlic, peppers in an oven-proof dish.
- Pour olive oil over.
- Add salt and pepper.
- Place in the oven for around 30 minutes – however, you should leave until the veg starts to brown and the sauce starts to reduce.
- Remove from oven and leave to cool.
- Add worcester sauce and balsamic vinegar.
- Place the mixture in a blender with basil and whizz until smooth (or your preferred consistency).
Boom – done!
